Summer is right around the corner! Though we have to indure the brutal Texas heat, at least we get to look forward to a bounty of beautiful fruits and vegetables to help us through the season. I, for one, will be dining on vegetable-driven dishes like Elote (Mexican Corn), Shaved Zuchinni & Garden Herb Salad, and Quinoa with Feta, Cucumbers, & Mint.

Circus animals have completely taken over our kitchen here at Chef Stephanie! Luckily they are pretty quiet for wild animals (and tasty, too!).
Layered beet & goat cheese salad with garlic-pistachio vinaigrette. Probably the last of the season since spring is just around the corner! Looking forward to an abundance of asparagus, artichokes, and rhubarb!
